120g whole natural almonds
2 tbsp caster sugar
1 tsp sea salt
How to make:
Heat the almonds in a dry frying pan for about 1-2 minutes, stirring, then add the butter and let it melt, stirring it into the nuts. Sprinkle in the sugar and cook for 1-2 more minutes, until the sugar caramelises and begins to smoke just a little. Remove from the heat immediately and cool. Sprinkle in the sea salt, then serve.
Top tip: For extra caramel, first grease a metal baking sheet with a drop or two of vegetable oil. Heat 50g caster sugar in a heavy-based saucepan (don’t add water). Taking great care, cook over a high heat until the sugar melts and caramelises, turning a rich, golden brown.
Pour onto the prepared sheet and leave until cold, then break up with a knife or toffee hammer into tiny pieces. Stir these through the almonds.
